Espresso Tamping Technique – Updated

Here is version two of Gail’s tamping technique; the original version had her tapping the side of the portafilter but she has since been schooled! This is how she preps shots for demonstrations in Seattle Coffee Gear’s retail store.

Espresso Coffee Percolation

After three years spent percolating coffee I decided to film it in close up. This is a Lavazza Carmencita small-medium sized stove-top pot. The coffee is Lavazza Crema a Gusto espresso. I heat the pot at a high temperature until I can hear the water begin to boil. As soon as this happens I bring it right down to the lowest temperature and wait for the coffee to percolate through the spout. Some people criticise this method because you’re not supposed to boil coffee. What I used to do was keep it at a low temperature throughout and take the pot from the heat before the boil. But this could take up to half an hour. I find removing the pot from the heat just before the spluttery noises start prevents any burning.

Just a simple video making a cappuccino (latte style – milk first for layering) with my Dolce Gusto. I had a Tassimo, but did not like the chemical tast from the milk discs and the Dolce froths so much better and tastes great!
